Chicken Moussaka

Serves 10

Ingredients

10 pc Chicken breast
70 g Oil, sunflower
1500 g Eggplant, skinned slices
150 g Onion, diced  
10 g Garlic
100 g Bell peppers 
100 g Tomato, puree
100 g Tomato, diced
400 ml Water
20 g Knorr Chicken Stock Powder
3 g Knorr Lime Seasoning 
150 g grated Parmigiano
5 g parsley finely diced
1 g black pepper
Classic Mediterranean dish, layers of eggplant and chicken breasts covered and baked in a rich tomato sauce. Chicken Moussaka is a great dish for the healthier part of the menu. Click here for the recipe!
 

Preparation

Chicken Preparation

  • Cut the chicken breast and eggplant into thick slices
  • Season with Knorr Chicken Stock Powde
Chicken Preparation
  • Over medium heat in a large pan, add the oil and onions sauté until tender then add the garlic
  • Add the tomato puree, diced tomatoes, Knorr Lime Seasoning, parsley and water, Season with pepper then bring to a boil
  • Layer the chicken and eggplant in the pan, top off with sauce. Bake for 20 min
    Garnish with grated parmesan cheese.
